On a skillet, heat the oil and add the onions and cook until translucent. Using a fork, scrape the inside of the squash until it resembles spaghetti. Roast the squash until tender and allow to cool. Place the squash cut-side down on a baking sheet lined with parchment paper. Scoop out the seeds, brush the inside with olive oil and season with salt and pepper. After, microwave the squash to soften it a bit to make it easier to cut. Then, poke a few holes along the score to allow steam to release when microwaving the squash.
